RECIPE: Brigadeiro


Back in 2002 I hosted a retreat in my home, and a guest from Brazil taught me how to make Brigadeiro. Her version used the microwave, but I can't find that recipe. Remembering the ingredients, I went to allrecipes.com and found this version, with my notes added. It works great!

So, yesterday, to ring in the New Year, I made these little chocolate truffles to take to a party. The photo above is a photo of my little creations. FUN!

Ingredients:
3 tablespoons unsweetened cocoa
1 tablespoon butter
1 14-oz can sweetened condensed milk

Directions:
In a medium saucepan over medium heat, combine all 3 ingredients. Cook, stirring with a wooden spoon, until thickened, about 12 minutes. Remove from heat and let rest until cool enough to handle. Form into small balls (I do this by using a miniature scoop and plopping a scoop of the chocolate mixture into my Pam-sprayed hand to shape). Roll into topping of choice (I used candy and chocolate sprinkles). Chill until serving.

Makes about 20 little balls. I like putting them inside little fluted paper liners.

RECIPE: Quick Brown Rice Casserole


Okay, I invented this recipe last night when I didn't have the ingredients for a traditional rice pilaf, and didn't have all the ingredients for a baked brown rice.

serves 4-6

1 boil-in-bag Brown Rice (quick rice that cooks in 10 minutes)-cooked
(Brown rice is healthier and has a nice nutty taste perfect for this recipe)

Mix with:
1 small can mushroom stems 'n pieces
1/2 cup or so of frozen seasoning mix (I think its onions, peppers, celery, parsley)
1 tsp. butter
little shake of poultry seasoning, and garlic pepper seasoning, and sea salt
1 egg

Bake for 375 in a convection oven for 10 minutes. Or 375 in regular oven for 15 minutes.

Remove and add about 1/2 cup of grated reduced fat Mexican blend cheese-stir. Pat down with back of spoon. Then sprinkle about 1/3 cup of sliced almonds on top.

Go back in the 375 convection oven for about 5-10 more minutes.

It's all ready in just 30 minutes--most steamed brown rice takes 50 minutes so this is a good time saver, boosts up the taste AND the nutritional values.

RECIPE: Spaghetti Sauce


I made a pretty awesome spaghetti sauce last night, if I do say so myself. I made it with just ingredients I had on hand.

This is a small batch since there are just 2 of us. I think it feeds 4.

1 15 oz. can tomato puree
1 15 oz. can petite diced tomatoes, with liquid
1 small can tomato sauce
1 small can tomato paste
Italian Seasoning, crushed up in my hands first
Minced garlic
diced fresh mushrooms
Salt

Cook in large saucepan.

In a saute pan, brown ground beef (I used less than a pound) and towards the end, add chopped onion salt and pepper and cook until onions are transparent. Drain and add to the saucepan. Ten minutes before serving, add a splash of red wine vinegar and a packed tablespoon of brown sugar and let it cook in before serving over your pasta of choice.

Thanksgiving Day

Did you have a nice Thanksgiving? We spent the afternoon with new friends Wendy and Jack in Harlingen, and their families. Jack is an orthopedic surgeon, and his family comes from Mexico. They have a beautiful home, and were very gracious to open it up to several from both sides of their families, as well as us. It was a perfect blending of Mexican and American cultures of several generations, except the food was All-American Thanksgiving. I was introduced to Jack's cousin Pillar (sounds like pill and rhymes with car), from Mexico City. I said, "Como esta, usted" and she said, "Mui Bien, et tu?" and I said, "Mui Bien, Gracias." I said it with all the correct Spanish accents. Then Pillar thought I was fluent in Spanish and/or was Hispanic and she started a long conversation in Spanish before she caught her breath. I had to explain I didn't know much Spanish! She thought I did pretty well-but now I'm determined that I need to learn more!

My contribution to the yummy meal was a recipe from Paula Deen. No offense, Mom, but it's called Not Yo Momma's Banana Pudding. It is delicious. I changed it up just a bit from the original recipe. In a mixing bowl, I mixed 1 pkg of cream cheese, reduced fat (it's smoother and blends better). To that I added: 1 large pkg. jello instant vanilla pudding, 1 cup half-n-half, 1 cup milk, and 1 can sweetened condensed milk. Then I added 1 regular container of Cool Whip, extra creamy. I put one layer of cookies on the bottom of the casserole pan. The cookies are by Peppridge Farm and are a shortbread cookie with the chess game figures on them. Then I layered 3 sliced bananas and the pudding mixture 3 more sliced bananas and the rest of the pudding mixture, and ended with another layer of cookies, pressed into the mixture. YUMMO!

It was great to spend our first Thanksgiving Day in the Rio Grande Valley with families who love each other and embrace life with gusto!
